Balsamic Vinegars

Our balsamic vinegars are imported from Modena, Italy where balsamic vinegar was first invented and, centuries later, is still produced. Each vinegar manufacturer has a secret formula for the progression of larger to medium to smaller barrels in the production process, and the woods most used are chestnut, ash tree, cherry, acacia, mulberry, juniper and oak. All balsamic vinegars are produced from white grapes, mainly the Trebbiano variety.
